- 1 large cucumber, peeled and diced
- 1 small sweet onion, finely diced
- 1/3 cup roughly chopped fresh mint
- 1/3 cup roughly chopped fresh Italian parsley
- 2-3 tablespoons white vinegar
- Sea salt and freshly ground black pepper to taste
Mix together all the ingredients in a small bowl. Cover with plastic wrap and chill until ready to serve.
